Easy Chicken Masala
4 boneless, skinless chicken breast portions
2 tbs olive oil
1 large onion, chopped
2 tbs chopped garlic
3 tbs garam masala
1 15 oz can crushed tomatoes
3/4 cup light coconut milk
1/2 cup cream of chicken soup
Dice chicken and brown in olive oil. Remove from pan and set aside. Saute onion and garlic until softened; add garam masala. Add tomatoes, coconut milk, and soup. Return chicken to the pan and simmer on low for 30 minutes.
Serve over basmati rice.

I made this for supper last night, and it really was good. Fast, too. Not quite as good as a restaurant dish, but pretty close.
